7. TURKISH JELLY. A Very Favorite Dessert.
PELTEH.
Ingredients:
Sugar ......................................1 cupful.
Rice Flour .................................1 cupful.
Plain Water .....................4 cupfuls (or more).
Almonds .........................1/2 cupful, roasted.
Cinnamon ..............................1 teaspoonful.
Method:
Mix the rice flour in the water, add the sugar, and boil on a slow fire until
well done. Stir it constantly during the process of boiling to avoid
coagulation.
After pouring it into a suitable deep plate, cover the surface with the almonds
and sift the cinnamon over it, in the form of decoration.
Serve cold.
