TATLI.
1. ORANGE MARMALADE.
PORTUCAL KABOUK RENDEH.
Ingredients:
Oranges ...........................3 to 4, the skins.
Lemon .............................................1.
Sugar ......................................3 pounds.
Water .....................................3 cupfuls.
Method:
Shave finely the skins of the oranges, and after leaving them in cold water for
two hours, spread on linen and sprinkle over the juice of the lemon. Then boil
the sugar in the water over a moderate fire, adding also the orange shaving.
This mixture should gradually be brought to the thickness of honey, and put in
jars.
