Method:
First of all, coat the fish slightly with oil and broil over slow fire, then lay
it in a deep flat pan, over which should be placed the above listed ingredients
in the following manner:
Slice the tomatoes and arrange over the fish, also the dry onions likewise. Sift
over this the parsley and the mint, both of which must be very finely cut, then
add the water and the oil. Season to taste and bake in a hot oven until done.
Serve hot or cold, on lettuce leaves, and garnish with sliced lemons.
3. BAKED FISH A LA "ARMENIA."
ERMENI BALUCK PLAKI.
Ingredients:
Fish ..................................................... 3 pounds.
Butter ........................................... 2 tablespoonfuls.
Olive Oil .............................................. 1/2 cupful.
Onions .................................................. 4, medium.
Lemons .......................................................... 2.
Eggs ............................................................ 3.
Parsley ................................................... 1 bunch.
Curry ............................................... 1 teaspoonful.
Salt and pepper, to taste.
