be substituted for pumpkin, and are much preferred by many, as possessing a less
strong flavor.
Apple pie.
Stew sour apples until soft and not much water is left in them and rub them
through a collender; beat 3 eggs for each pie and use 1 cup butter and one of
flour for 3 pies: nutmeg seasoning.
Cream pie.
Thoroughly beat together half a cup sugar, the white of an egg and a tablespoon
flour; then add a cup of rich milk, or part cream; bake with only an undercrust,
and grate nutmeg over it.
Peach pie.
Line a pie-tin with puff-paste, fill with pared peaches, cut in halves or
quarters, well covered with sugar; put on an upper crust and bake.
