taken. When used in this latter condition, soaking from 8 to 10 hours is
necessary; also a little trimming at the head. Imported from Italy, Greece and
Turkey. Retailed at 6 to 8 cents per pound.
ARTICHOKE. (ENGHINAR.)
Artichoke is now raised in America and sold at from 3 to 8 cents a piece,
according to size, but the finest artichokes is obtainable in large cans. It is
imported from Italy, Greece and Turkey, and retailed at 35 cents per can.
CUMMIN. (KIMION.)
Cummin, which is generally used in a number of Oriental dishes, is prepared in
the following manner:
It is first cleaned from its dust or other foreign matter that may have been
mixed with it, washed well, dried well, and then roasted over a very slow fire
in an ordinary frying pan, stirring it continuously with a spoon during the
process of roasting. (Roasting may also be done in a moderately hot oven.) When
well brown, it may be considered done, and when cooled down it should
