14. BRAIN SALAD.
BAYIN SALATA.
Ingredients:
Brain ...............................1 to 2, of lamb.
Olive Oil .................1 tablespoonful (or more).
Lemons ............................................2.
Salt and pepper, to taste.
Method:
Boil the brain in hot water, until it is milk-white, then pass it through cold
water. Slice, season to taste and serve with the olive oil and the lemons.
15. LOBSTER SALAD.
STACOZ SALATA.
Ingredients:
Lobster ...........................................1.
Olive Oil ..........................2 tablespoonfuls.
Lemons ............................................2.
Salt and pepper, to taste.
Method:
Boil the lobster--as directed in the chapter, Lobsters--clear it from the shell,
and cut into small pieces. Season to taste and serve on lettuce leaves, with the
olive oil and the lemons.
