Method:
Soak the chick peas in cold water for 8 to 10 hours. Then wash, boil until well
done, strain, and press well into a paste. Mix with it the onions, very finely
chopped; also the parsley. Season to taste and dish out on lettuce leaves. Use
the olive oil and the lemon only at the time of serving.
6. CUCUMBER SALAD WITH * "MATZOUN"
JADJIGH SALATA.
Ingredients:
Cucumbers .................................2, medium.
Matzoun .........................3 cupfuls (or more).
Garlic ........................3 to 4 bulbs, pressed.
Salt, to taste.
Method:
Slice the cucumbers very thin, and add the Matzoun, thinning with some plain
water if it is thick. Then put in the juice of the garlic, season to taste, and
serve with some ice.
