4. Lemon Pie. 1 cupful of sugar, 1 cupful of thick sweet cream, 4 eggs and 2
lemons. Grate the rind of the lemons, squeeze out the juice, add the sugar and
the yolks of the eggs, and beat to a cream; add the cream, and bake in a rich
undercrust. Beat the whites of the egg's to a stiff froth, beat in a few
tablespoonfuls of powdered sugar, spread on the top of the pie when the pie is
baked, then set it in the oven to set the meringue.
5. Cocoanut Pie. 1 cupful of sugar, 1 cupful of sweet milk, the grated rind of a
lemon, 4 eggs, 1 tablespoonful of butter, 1 grated cocoanut. Stir the sugar with
the butter, and add the yolks of the eggs, then stir in the cocoanut, the milk
and the grated rind of a lemon, and lastly the whites of the eggs beaten to a
stiff froth. Bake in a deep dish lined with paste.
6. Boiled Apple Dumplings. 1/2 pint of cold milk or water, 2 quarts of finely
chopped apples, 1 tablespoonful of butter, 1 teaspoonful of salt, 1 quart of
flour, and 2 teaspoonfuls of baking powder. Stir together flour, baking powder
and salt. Rub together the butter and the flour, then stir in the apples, and
make into a loaf with the milk or water. Any kind of fruit may be used instead
of the apples. Serve with a brandy or a lemon sauce. The water must be boiling
when the pudding is put in to boil, and must not stop boiling until the pudding
is done.
7. Steamed Suet Pudding. 1 cupful of molasses, 1 cupful of water or milk, 1
cupful of chopped raisins or currants, 2/3 cupful of butter, 1 cupful of chopped
suet, 1/2 teaspoonful of nutmeg, 1/2 teaspoonful of cinnamon, 1/2 teaspoonful of
salt, 1 teaspoonful of soda, and 2 1/2 cup fuls of flour. Sift the soda, the
salt and the spices into the flour, rub the butter in the flour and then add the
raisins. Mix the milk with the molasses, and stir into the flour. Steam in a
buttered pudding mould for two hours. Serve with a brandy sauce.
8. Boiled Corn-Meal Pudding. Warm a pint of milk and a pint of molasses, and
stir well together. Then beat together 4 eggs, and stir these with 1 cupful of
chopped beef suet and corn-meal enough to make a stiff batter. Stir in a
teaspoonful of soda dissolved in a little
